Avocado Deviled Eggs

Ingredients
  

  • 6 large eggs
  • 1 ripe avocado about 100g
  • 1 tsp dijon mustard
  • 2 tsp lemon juice
  • 1 tsp smoked paprika (and some extra to sprinkle)
  • salt to taste
  • ground pepper to taste

Method
 

  1. Place the eggs in a saucepan and fill the saucepan with cold water until it just covers the eggs.  Place the saucepan on the stove and bring to a boil.  Turn the heat off once the water has come to a boil and leave the eggs to sit in the hot water for 15 minutes.  At this time,transfer the eggs into an ice bath.  Once the eggs are cooled, peel them.  
  2. Cut the eggs in half and gently remove the yolks. Set aside the whites. 
  3. To make the avocado filling, place the yolks in a small bowl and smash using a fork. Add in the remaining ingredients and combine until smooth. 
  4. Transfer the yolk mixture into a piping bag and pipe into each egg half. 
  5. Serve immediately or store it in an air tight container and serve within the same day.
