Method
- Place the eggs in a saucepan and fill the saucepan with cold water until it just covers the eggs. Place the saucepan on the stove and bring to a boil. Turn the heat off once the water has come to a boil and leave the eggs to sit in the hot water for 15 minutes. At this time,transfer the eggs into an ice bath. Once the eggs are cooled, peel them.
- Cut the eggs in half and gently remove the yolks. Set aside the whites.
- To make the avocado filling, place the yolks in a small bowl and smash using a fork. Add in the remaining ingredients and combine until smooth.
- Transfer the yolk mixture into a piping bag and pipe into each egg half.
- Serve immediately or store it in an air tight container and serve within the same day.
