How to choose avocados?

Unripe avocados are hard and waxy – they will be hard to cut or mash. Most importantly, unripe avocados are totally unpleasant to eat. So, here’s how to tell if your avocado is ripe. Hold the avocado in your hand, and press gently. Your avocado should be firm with a little give. If it is hard, it is not ripe. On the other hand, if your avocado is overripe, they will be soft and sometimes the shell may not look as fresh. Overripe avocados also do not taste the best.
What you will need
Large eggs I like to use large eggs in this recipe, as their large yolks will allow me to make more filling (YUM!). Their size also makes it easier to work with. However, if you do not have large eggs, any sized eggs will work too.
Avocado The avocado gives this deviled egg filling its naturally creamy texture. It replaces mayonnaise in your typical deviled eggs recipe.

Dijon mustard This is mixed into the filling, giving this snack a nice spice kick and flavour.
Lemon juice As avocados go brown after a period of time, the addition of lemon juice will prevent the avocado filling from going brown.
Smoked paprika Add this ingredient to give your avocado filling more flavour. reserve some to sprinkle over the top of the completed avocado deviled eggs to make it look even more appetizing.
Salt and ground pepper These a great to season your avocado deviled eggs.
How to make these easy avocado deviled eggs from scratch?
Place the eggs in a saucepan and fill the saucepan with cold water until it just covers the eggs. Place the saucepan on the stove and bring to a boil. Turn the heat off once the water has come to a boil and leave the eggs to sit in the hot water for 15 minutes. At this time, transfer the eggs into an ice bath. Once the eggs are cooled, peel them.


Cut the eggs in half and gently remove the yolks. Set aside the whites.
To make the avocado filling, place the yolks in a small bowl and smash using a fork. Add in the remaining ingredients and combine until smooth.
Transfer the yolk mixture into a piping bag and pipe into each egg half.

Serve immediately or store it in an air tight container and serve within the same day.
Can I use frozen avocados?
YES! If you are using pre-mashed frozen avocados, simply defrost them and they’ll be ready to use. If you are using halved or pieces of frozen avocados, mash your avocado once defrosted.

Do I need a piping bag to make these avocado deviled eggs?
If you do not have a piping bag, you can make these easy avocado deviled eggs. To fill the egg white halves without a piping bag, you may either fill a zip-lock bag with the avocado filling, cut a small hole at the corner and fill; or you may simply use a teaspoon to spoon the filling into the egg whites.
