Method
For the chicken
- To make the marinate for the chicken, mix together the paprika, garlic powder, onion powder, salt and pepper in a small bowl.
- Place the chicken thigh fillets on a lined baking tray and sprinkle each fillet with the spice mix on each side. Bake at 200°C for 15 minutes.
- After this time, remove the chicken thighs from the oven, let them rest for 5 minutes. Now, thinly slice the chicken. Transfer into a bowl and leave aside for assembly.
For the salsa
- While the chicken is baking, dice the tomato into small cubes.
- Place the tomato, coriander and lime juice into a small bowl and mix together.
To assemble
- Prepare the tortillas as directed by the instructions on the packaging.
- Place a tortilla on a dinner plate, and top the tortilla with some purple cabbage, chicken, salsa and a squeeze of mayonnaise. Repeat for the remaining 3 tortillas. Serve and enjoy immediately.

Notes:
* For a healthier option, use sour cream or Greek yogurt instead of mayonnaise. I used mayonnaise in this recipe, as it is what I had in my fridge. As this recipe does not call for much, I still consider this a healthy recipe. Whichever option you use, this ingredient will provide the creamy element that will make you forget you are eating healthy.
