Healthy chicken wrap - baked paprika marinated chicken thigh slices, tomato and coriander salsa, shredded purple cabbage, and a squeeze of mayonnaise on top of a tortilla.

Healthy Chicken Wrap

This easy chicken wrap recipe is so tasty that you'll forget you're eating healthy!

Ingredients
  

For the chicken
  • 2 chicken thigh fillets
  • 2 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • pepper to taste
For the salsa
  • 1 tomato small
  • 2 tbsp coriander finely chopped
  • 1/2 lime juiced
Other ingredients
  • 4 tortillas store bought
  • 1 cup purple cabbage shredded
  • 2 tbsp mayonnaise *

Method
 

For the chicken
  1. To make the marinate for the chicken, mix together the paprika, garlic powder, onion powder, salt and pepper in a small bowl.
  2. Place the chicken thigh fillets on a lined baking tray and sprinkle each fillet with the spice mix on each side. Bake at 200°C for 15 minutes.
  3. After this time, remove the chicken thighs from the oven, let them rest for 5 minutes. Now, thinly slice the chicken. Transfer into a bowl and leave aside for assembly.
For the salsa
  1. While the chicken is baking, dice the tomato into small cubes.
  2. Place the tomato, coriander and lime juice into a small bowl and mix together.
To assemble
  1. Prepare the tortillas as directed by the instructions on the packaging.
  2. Place a tortilla on a dinner plate, and top the tortilla with some purple cabbage, chicken, salsa and a squeeze of mayonnaise. Repeat for the remaining 3 tortillas. Serve and enjoy immediately.

Notes

Notes:
* For a healthier option, use sour cream or Greek yogurt instead of mayonnaise. I used mayonnaise in this recipe, as it is what I had in my fridge. As this recipe does not call for much, I still consider this a healthy recipe. Whichever option you use, this ingredient will provide the creamy element that will make you forget you are eating healthy.
