This simple chicken wrap recipe is so tasty that you’ll forget you’re eating healthy! Colourful and nutritious ingredients wrapped in a tortilla, this recipe will make for the perfect quick lunch to power you through your busy day!

What you’ll need…
Chicken thigh fillets Feel free to use chicken breasts if you prefer. I like to use chicken thighs, as I find it to be more moist and tender.
Paprika I used smoked paprika, as I feel like it adds more flavour to the chicken. However, normal paprika will work well too.
Garlic powder
Onion powder
Salt
Pepper Add as much or as little pepper, according to your preference.
For the salsa
Tomato
Coriander
Lime juice
Other ingredients
Tortillas To keep this recipe quick and simple, I used store-bought tortillas.
Purple cabbage Shred the purple cabbage finely. It will add a nice crunch and freshness to this healthy chicken wrap.
Mayonnaise, sour cream or unsweetened Greek yogurt For a healthier option, use sour cream or Greek yogurt instead of mayonnaise. I used mayonnaise in this recipe, as it is what I had in my fridge. As this recipe does not call for much, I still consider this a healthy recipe. Whichever option you use, this ingredient will provide the creamy element that will make you forget you are eating healthy.

How to make these rainbow chicken wraps?
For the chicken
To make the marinate for the chicken, mix together the paprika, garlic powder, onion powder, salt and pepper in a small bowl.
Place the chicken thigh fillets on a lined baking tray and sprinkle each fillet with the spice mix on each side. Bake at 200°C for 15 minutes.
After this time, remove the chicken thighs from the oven, let them rest for 5 minutes. Now, thinly slice the chicken. Transfer into a bowl and leave aside for assembly.
For the salsa
While the chicken is baking, dice the tomato into small cubes.
Finely chop the coriander.
Place the tomato, coriander and lime juice into a small bowl and mix together.
To assemble
Prepare the tortillas as directed by the instructions on the packaging.
Place a tortilla on a dinner plate.
Top the tortilla with some purple cabbage, chicken, salsa and a squeeze of mayonnaise. Repeat for the remaining 3 tortillas. Serve and enjoy immediately.

Healthy Chicken Wrap

- 1 tomato small
- 2 tbsp coriander finely chopped
- 1/2 lime juiced
Other ingredients
- 4 tortillas store bought
- 1 cup purple cabbage shredded
- 2 tbsp mayonnaise *
Instructions
For the chicken
