Method
- Preheat oven to 450F / 230C.
- In a large frying pan or skillet,melt butter over medium heat. Add garlic, and cook until fragrant, about 1-2 minutes.
- Add mushrooms, thyme, and oregano. Stirring occasionally, cook until mushrooms become tender and browned, about 5-6 minutes. Season with salt and pepper.
- Sprinkle a clean work surface with semolina. Roll out pizza dough into a circle or rectangle. Transfer onto a lined baking sheet.
- Top with mozzarella, dollops of ricotta, and mushrooms.
- Bake for 15-20 minutes, or until crust is golden brown and the cheese have melted. Serve immediately.

PRO TIPS
Cook the mushrooms! It is so important to sauté your mushrooms before topping the pizza. This will ensure the mushrooms will remain juicy and flavourful, and perfect them from drying our in the oven. This is also a great time to allow the mushrooms to absorb all the flavours of the salt and herbs.
Cheese This recipe calls for dollops of ricotta cheese to top the pizza to add some creaminess. However, feel free to try other variations. Dollops of goats cheese will also add creaminess to your pizza, and also an extra layer of flavour. Another option, if you are a blue cheese fan, is crumbles of blue stilton or gorgonzola.
PIZZA CHEESE MIX
Pizza cheese mix is the perfect blend of mozzarella (70%), cheddar (20%), and parmesan (10%). It is made to melt and give you that perfect pizza cheese stretch, while also turning the perfect golden colour. With this cheese mix, I guarantee that you will get the most deliciously cheesy pizza every time.
You can make however much or little pizza cheese mix as you want. To make calculations easier, I like to make 10 ounces of this pizza cheese mix each time. So, following the ratio above, I will add 7 ounces of mozzarella, 2 ounces of cheddar, and 10 ounces of parmesan into a mixing bowl and mix through thoroughly.
Having extra is also great, as I like to add a little extra cheese to my pizza. Also, you can store any leftovers in a Ziplock bag or air-tight container in the refrigerator.
