White Mushroom Pizza – Pizza Bianca

White mushroom pizza – it tastes like cream of mushroom soup, but on a pizza!  Loaded with lots of cheese and garlic herb sauteed mushrooms, if you love mushrooms and cheese, you will love this white mushroom pizza.

When you think of pizza, what do you think of?  My guess is that you are thinking of either a margarita or a pizza with a red tomato base topped with pepperoni and lots of cheese.  But, did you know that white pizza is a thing?  Well, I didn’t until about a couple of years ago!  I mean, whenever I made pizza at home, I would always make one ‘normal’ pizza and I would play around with the second pizza.  Instead of a tomato base, I liked to spread some basil pesto and top it off with some anchovies, cherry tomatoes, and cheese.  So, when I heard about white pizza, I knew I had to try it.  Surprise, surprise, I LOVE IT!

WHAT IS PIZZA BIANCA?

Pizza Bianca literally means ‘white pizza’ in Italian.  It is typically made from pizza dough, olive oil, cheese, and salt.  Vegetable toppings can be adding, such as spinach, tomato, herbs, or in this case, mushrooms.

WHAT YOU’LL NEED FOR THIS RECIPE

Olive oil

Butter Unsalted

Garlic Minced

Mushrooms Thinly sliced. I am using white button mushrooms in this recipe, but you can use any kind of fresh mushrooms you’d like. Just avoid using canned mushrooms!

Dried thyme

Dried oregano

Salt

Pepper

Semolina Flour

Pizza dough Either homemade or store bought

Pizza cheese mix A blend of shredded mozzarella, cheddar, and parmesan cheese. See below for more details.

HOW TO MAKE WHITE MUSHROOM PIZZA

Preheat oven to 450F / 230C.

In a large frying pan or skillet, melt butter over medium heat.  Add garlic, and cook until fragrant, about 1-2 minutes.

Add mushrooms, thyme, and oregano.  Stirring occasionally, cook until mushrooms become tender and browned, about 5-6 minutes.  Season with salt and pepper.

Sprinkle a clean work surface with semolina flour.  Roll out pizza dough into a circle or rectangle.  Transfer onto a lined baking sheet.

Top with mozzarella, dollops of ricotta, and mushrooms.

Bake for 15-20 minutes, or until crust is golden brown and the cheese have melted.  Serve immediately.

PRO TIPS

Cook the mushrooms! It is so important to sauté your mushrooms before topping the pizza.  This will ensure the mushrooms will remain juicy and flavourful, and perfect them from drying our in the oven.  This is also a great time to allow the mushrooms to absorb all the flavours of the salt and herbs.

Pizza cheese mix Pizza cheese mix is the perfect blend of mozzarella (70%), cheddar (20%), and parmesan (10%).  It is made to melt and give you that perfect pizza cheese stretch, while also turning the perfect golden colour.  With this cheese mix, I guarantee that you will get the most deliciously cheesy pizza every time.

Ricotta cheese alternatives This recipe calls for dollops of ricotta cheese to top the pizza to add some creaminess.  However, feel free to try other variations.  Dollops of goats cheese will also add creaminess to your pizza, and also an extra layer of flavour.  Another option, if you are a blue cheese fan, is crumbles of blue stilton or gorgonzola.

Pizza cheese mix is the perfect blend of mozzarella, cheddar, and parmesan.  It is made to melt and give you that perfect pizza cheese stretch, while also turning the perfect golden colour.  With this cheese mix, I guarantee that you will get the most deliciously cheesy pizza every time.

You can make however much or little pizza cheese mix as you want.  The key thing is to follow this ratio: 70% mozzarella, 20% cheddar, and 10% parmesan.

To make calculations easier, I like to make 10 ounces of this pizza cheese mix each time.  So, following the ratio above, I will add 7 ounces of mozzarella, 2 ounces of cheddar, and 10 ounces of parmesan into a mixing bowl and mix through thoroughly.

Having extra is also great, as I like to add a little extra cheese to my pizza.  Also, you can store any leftovers in a Ziplock bag or air-tight container in the refrigerator. 

WHAT KIND OF MUSHROOMS TO USE ON MUSHROOM PIZZA BIANCA?

Any kind of fresh mushroom will work on white pizza!  I emphasise on ‘fresh’ mushrooms, do not use canned mushrooms here!  I normally use slices of white button mushrooms, as I like the flavour it brings to the pizza, and it is also the cheapest option.  However, feel free to experiment with different types or even a mix of mushrooms to add to your white pizza.  Some other delicious mushrooms include: cremini, shiitake, portobello, or oyster mushrooms!

  • 2 tbsp olive oil

  • 16 ounces mushrooms (450g/7 cups loosely packed) thinly sliced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • salt and pepper to taste
  • 1/4 cup semolina
  • 1 pound pizza dough (450g) homemade or store bought
  • 5 ounces shredded pizza cheese mix (150g)
  • 1 cup ricotta cheese

    • Hi Linda! Oh no, I wouldn’t want salmonella on my work surface either! Thank you for pointing out my typo (oops!)… all fixed now! I hope you will try making this white mushroom pizza with semolina flour instead hehe 🙂
