Eggs on toast – a breakfast classic but with endless options! Whether you are having breakfast in a cafe or at home, eggs on toast will always be the go-to hot breakfast.

Why I love this recipe?
The best thing about this breakfast option is that it is so versatile. You can keep it simple, with literally, eggs on toast, or you can add a few extra ingredients to make this breakfast extra special. Find some of my favourite extras I love to use to elevate the humble eggs on toast.
What you will need
Eggs To get the yummiest eggs, use fresh free range eggs. I also like to use extra large eggs, so that I get a larger portion.

Bread You may use any kind of bread you’d like. My favourite type of bread to use for this recipe is a nice slice of sourdough bread. To keep things interesting, I sometimes use an English muffin.
Butter For extra flavour, I always generously butter my toast before placing my eggs on top of it. As eggs has quite a bit of moisture, this layer of butter also help your toast from becoming soggy too quickly.
Salt and pepper It goes without saying, salt and pepper make great seasonings to anything really!
Extra fancy eggs on toast
As promised, here are some of my favourite additions:
- Dukkah sprinkled on top of my eggs
- Balsamic vinegar glaze, just a drizzle
- Avocado, either smashed or sliced
- Chilli flakes
- Bacon
- Cherry tomatoes

How to make this easy recipe at home?
Toast your slices of bread. I had some artisan sourdough bread from my local bakery, and couldn’t resist using it for this recipe!

While the bread is toasting, cook your eggs your preferred way. This time, I felt like some creamy scrambled eggs. Other equally delicious ways to prepare your eggs include: poached eggs, hard boiled eggs, or just your regular sunny side up.
Butter your toast, place it on a plate and top it with your eggs.
