Turn some pantry staples into deliciously crisp, light, and tender waffles!  This easy waffle recipe makes the best fluffy waffles.  Enjoy them fresh or freeze the extras for an instant treat later!

Is there a better breakfast than a stack of freshly made crispy, golden homemade waffles with a generous smear of butter drizzled in maple syrup?  I think not!  Plus, a big bonus is that your home will be filled with heavenly smell of freshly made waffles!

Pancakes tend to seem less intimidating to make than waffles.  But trust me, this recipe is as easy to make as pancakes.  If anything, it takes even less time to make these waffles than pancakes!  Don’t forget, you can make these waffles ahead of time and heat them up for an instant treat your family will LOVE. 

WHAT YOU’LL NEED FOR THIS RECIPE

Unsalted butter Melted and slightly cooled

All-purpose flour

Caster sugar I like to use caster sugar in this recipe, as the small granules make it easier to be incorporated in the batter. However, you may also use granulated sugar if that is what you have available.

Baking powder

Salt

Baking soda

Buttermilk I like to use buttermilk to make my waffles. If you do not have buttermilk available, you can make a buttermilk substitute by adding 1 tablespoon of vinegar to 2 cups of whole milk. Alternatively, you can simply use regular whole milk instead.

HOW TO MAKE THE BEST FLUFFY WAFFLES

Step 1: In a large bowl, whisk together flour, sugar, baking powder, salt, and baking soda.  In a smaller bowl, whisk together eggs, milk, and melted butter.  Fold the wet ingredients into the dry ingredients.

Step 2: Preheat a waffle iron as directed by the manufacturer’s instructions.

Step 3: Lightly coat the waffle iron with some butter or vegetable oil.  Spray oil is good to use here.  If you are using a non-stick waffle iron, skip this step.  The extra butter or oil will result in less crispy waffles.

Step 4: Ladle some batter into the waffle maker and cook waffle until golden and crisp.  Repeat to make more waffles.  Serve immediately or keep warm in a warm oven until ready to serve.

PRO TIPS FOR THIS WAFFLE RECIPE

Do not over-mix the batter.  Mix the batter enough so that it just comes together.  It’s alright if there are a few lumps of flour, these will disappear in when cooking.

Do this optional step to make the lightest and fluffiest waffles. Start off my separating the eggs.  In step 1, instead of adding whole eggs with the other ingredients, only add in the egg yolks.  In a separate bowl, wish the egg whites until stiff, then fold into the batter.

FAQ’s

Can I make these waffles in advance?

These waffles are great to make in advance.  This recipe is perfect for weekly meal prep.  Make a big batch of these delicious waffles, enjoy some fresh, and save the rest for later in the week.  You’re your waffles have cooled to room temperature, wrap them in plastic wrap or place them in a Ziplock bag, and store in the refrigerator for up to 3 days.  You may also freeze any extras in Ziplock bags for up to 2 months. 

To reheat your waffles, simply pop them in the toaster or oven (at 180C for about 5 minutes or until warm).  You can also use your waffle maker to reheat your waffles – just place the cooked waffle in the waffle maker and heat it up.  They will come out as good as freshly made waffles, maybe even slightly crunchier!

If you have any unused batter, keep it in an air-tight container in the refrigerator for up to 2 days.

How to make the best fluffy waffles even better?

To make the lightest and fluffiest waffles, separate the eggs.  In step 1, instead f adding whole eggs with the other ingredients, only add in the egg yolks.  In a separate bowl, wish the egg whites until stiff, then fold into the batter.

What is the difference between waffles and pancakes?

Waffles contain more butter and egg, giving them their crispy, golden brown exterior and soft, fluffy inside.  With a higher butter and sugar content, waffles batter will become more caramelised while cooking, giving them a richer flavour.  On the other hand, pancakes contain more baking powder to help them rise in the pan.  This makes pancakes softer and easier to eat.  Unfortunately, this means waffles and pancake batter is completely different.

Are Belgian waffles and American-style waffles the same?

The difference with Belgian waffles and American-style waffles is their shape.  Compared to American-styled waffles, Belgian waffles tend to have deeper pockets, making them great for holding lots of syrup.  Their texture is also lighter and crisper.  To make your desired style of waffles, you will need to use the appropriate waffle iron for that style.   Belgian waffles require a waffle iron with a deeper and larger grid, while American-style waffles require a waffle iron with a shallower and smaller grid.

What is the best way to eat waffles?

These waffles are best served hot or warm.  Cooked waffles can be frozen and reheated in a toaster, oven, or waffle iron.  If you are using a waffle iron, make sure you are using the same waffle iron you used to make the waffles to ensure it will fit perfectly.

The best way to eat waffles is with your favourite toppings. Here are a few of my delicious waffle topping suggestions:

  • Butter and cinnamon sugar
  • Blueberry jam
  • Butter and Llye’s golden syrup
  • Your favourite ice cream and crushed nuts
  • Fried chicken drizzled in maple syrup
  • Kaya, coconut cream and toasted coconut shavings

WAFFLES VARIATIONS

This recipe is versatile, and every now and then, I like to change things up a little to keep things interesting.  Here are a few of my favourite variations:

  • Caramelly waffles
    • Substitute the white caster sugar with brown sugar.  The brown sugar will give you darker coloured waffles that have a slight caramel-like taste to it.
  • Wholegrain waffles
    • For a slightly healthier option, make wholegrain waffles.  Use 1 1/3 cup all-purpose flour and 2/3  cup whole-wheat flour. 
  • Pandan waffles
    • For a quick and simple Asian-inspired waffle, add 1 teaspoon pandan essence with the other ingredients in step 1.

Fluffy Homemade Waffles Recipe

Ingredients
  

  • 170 g unsalted butter melted and slightly cooled
  • 480 g all-purpose flour
  • 30 g caster sugar
  • 16 g baking powder
  • 5 g salt
  • 6 g baking soda
  • 470 ml buttermilk *
  • 8 large eggs

Instructions
 

  • In a large bowl, whisk together flour, sugar, baking powder, salt, and baking soda.  In a smaller bowl, whisk together eggs, milk, and melted butter.  Fold the wet ingredients into the dry ingredients.
  • Preheat a waffle iron as directed by the manufacturer’s instructions.

*If buttermilk is not available, make a buttermilk substitute by mixing 470ml regular milk and 1 tbsp vinegar.  Alternatively, you can just use regular milk.  However, buttermilk or its substitute will result in fluffier waffles.
