This easy fluffy pancake recipe is perfect for weekend brunch or made in advance weekday morning breakfast. All you’ll need is a few pantry staples and about 30 minutes. I like to make a big batch of these pancakes and freeze them for some yummy instant breakfast treats!
WHAT YOU’LL NEED FOR THIS RECIPE
All purpose flour
Granulated sugar
Baking powder
Salt
Milk
Unsalted butter
Vanilla essence
Egg

HOW TO MAKE EASY FULLY PANCAKES
Step 1: In a large bowl, whisk together flour, sugar, baking powder baking soda, and salt.
Step 2: Add milk, butter, vanilla, and egg. Whisk together until a thick and smooth batter forms. Do not over mix, it is alright if there are a few lumps of flour. Your batter should be thick and creamy. However, you should still be able to smoothly pour the batter out of a measuring cup or ladle. If it does not, that means your batter is too thick, so add a couple tablespoons of milk into the batter until desired consistency is reached.
Step 3: Set batter aside, and heat up a non-stick frying pan or griddle over medium-low heat.
Step 4: Lightly grease the pan with a little butter. Wipe off any excess butter with a paper towel. Pour ¼ cup of batter onto the pan. If the batter is not spreading out by itself, use the back of the ladle or measuring cup to gently spread it out.
Step 5: When bubbles begin to appear on the surface and the underside is golden, use a spatula to flip the pancake and cook until golden. Repeat with remaining batter. Serve immediately with your favourite topping!
PRO TIPS FOR THIS PANCAKE RECIPE
Do not over-mix the pancake batter. To avoid ending up with dense and heavy pancakes, do not over-mix the batter. If you would like to make light and fluffy pancakes, only mix until the ingredients just come together. It is totally fine if there are a few lumps in your batter!

Only flip once! When cooking the pancakes, only flip the pancakes once! When little bubbles start forming on the top, flip the pancake and wait for the remaining side to cook. If your pancakes are browning too quickly (that is before bubbles start forming), lower the heat.

Can I make pancake batter ahead of time?
To make the best soft and fluffy pancakes, I do not recommend making the batter ahead of time. Instead, mix all the dry ingredients and store in an air-tight container and keep it in your pantry until you are ready to use it.
Can I make these pancakes in advance?
Allow any leftovers or extras to cool before transferring the pancakes into an air-tight container or Ziplock bag, and refrigerate for up to 1 week or freeze or up to 3 months.

What is the difference with pancakes and waffles?
Waffles contain more butter and egg, giving them their crispy, golden brown exterior and soft, fluffy inside. With a higher butter and sugar content, waffles batter will become more caramelised while cooking, giving them a richer flavour. On the other hand, pancakes contain more baking powder to help them rise in the pan. This makes pancakes softer and easier to eat. Unfortunately, this means waffles and pancake batter is completely different.
What is the best way to eat pancakes?
These fluffy pancakes are best served hot or warm. Cooked pancakes can be frozen and reheated in a toaster or oven. Full disclosure, sometimes when I get lazy, I reheat my pancakes in the microwave. For this method, your pancakes will still be delicious, but they will not have those crispy edges.
The best way to eat your fluffy homemade pancakes is with your favourite toppings. Here are a few of my delicious pancake topping suggestions:
- Butter and cinnamon sugar
- Sugar and a sprinkle of lemon juice
- Honey
- Maple syrup
- Your favourite ice cream
